BELUGA CAVIAR (ITALY) Beluga is a caviar extracted the Great Sturgeon (Huso Huso). This fish can reach 8 meters (26 ft) in length and more than up to 3 tons in weight. Originally found in the Black Sea, Caspian Sea and Azov Sea, it was been in Italy as well (Adriatic Sea and Ionian Sea). It is the rarest and most costly, defined by large roes (more than 3 mm) which tend to be oval shaped and color tones of pearl grey to dark grey. This caviar has to be tasted strictly by itself to truly appreciate and savor its incredible quality.
